Williamsburg restaurant inspections, Nov. 2

Results of Virginia Department of Health restaurant inspections were reported in the Williamsburg area Nov. 2:

A routine inspection of Chef's Kitchen was conducted  Nov. 2, according to the Virginia Department of Health. Two critical violations were found.

The facility is a full service restaurant located at 501 Prince George Street.

The following violations were reported:

The backflow or back-siphonage prevention device installed on the spray hose is not identified as meeting standards set by the American Society of Sanitary Engineering.

The food-contact surfaces of the following equipment were not observed sanitized because the dish machine is not dispensing 50-100 ppm of chlorine.

Chicken stock in 2-10-inch containers and prepared last night is noted as not being adequately cooled to prevent the growth of harmful bacteria.

The Department of Health made the following recommendations:

Provide the approved backflow or back-siphonage device for the specific application and type of device to prevent contamination of the drinking water system.

Go to a manual dish washing operation. Repair dish machine. After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

Cool potentially hazardous foods from 135.

Inspections are scheduled to take place one to four times per year depending on variables such as menu complexity, how much food is made in advance versus cooked-to-order and how much food is made from raw products, according to the Virginia Department of Health website. Critical violations, if left uncorrected, are more likely than other violations to directly contribute to food contamination, environmental degradation or illness. Noncritical violations are not directly related to causing food-borne illness.
